Happy St. Patrick's Day, friends! This holiday is definitely a good one, no pressure to go over the top yet still a good excuse to celebrate while dressing in theme. We will totally take it & did all weekend long, with Waverly Maye shaking her shamrocks all over the place.
I'm definitely bitter that this is one of those holidays not recognized by the school system as a day off (we should really work on that for next year), yet I can't complain too much since we got some beautiful weather this weekend to celebrate early. Just like always, we spent as much time as possible outside & loved every second. This weather seriously makes us all so very happy, Waverly cannot get enough & would without a doubt live outside if we let her. She has been in rare form lately, happy as a leprechaun even after no nap all weekend long. I obviously tried, she had other plans & I couldn't say no to that happy face.
And of course, we have to share the results of our lucky link-up!! Just my luck, after sharing my lack of cooking skills & taking the easy (yet delicious) route of my lucky charm rice krispy treats, I was randomly paired with the Leprechaun Green Enchiladas. I'm not going to lie, the recipe was totally intimidating for me. Mexican is definitely a favorite at our house, but usually the only enchiladas we see are at the restaurant up the street with margaritas in our hand. Yet I'm always open to new meal ideas & appreciated the chance for a date night in with my husband, we decided to make the recipe together after Waverly went to bed because obviously, something like that needed our full attention.
I do want to point out that Waverly did take part in the grocery store portion of this activity. Lately, my sweet yet energetic little lady is a bit of a challenge to take to the grocery shopping. Like the minute I sit her down in the cart she says "all done" & wants to run rampant through the aisles pulling down everything in sight kind of challenge. So I've tried to really simplify our grocery runs, pretty much buying the same things each time, memorizing where everything is & basically all but running through the aisles to make it in & out as fast as possible. I think I break a sweat each time, the plus is that I actually get a workout in during the whole process.
So this trip with my toddler (with many new ingredients to find), was actually entertaining it was such a disaster. I'll spare you the details, I actually brought my mom as extra assistance & even two grown adults couldn't handle my one-year old on this one. ;)
Yet all in all, by the end of the evening, we had some really delicious enchiladas that were well-worth it! The recipe really was a good one, so much so that my husband & I both agreed we would make them again. I am so thankful to the girls at All in Good Twine & that I was paired up with them!
We also made the guacamole that they recommended, for some reason guacamole has always scared me off before but this was actually really good & the perfect addition to the enchiladas.
As was the Corona, obviously ... especially after that trip to the store. :)
